Potassium ferrocyanide, a chemical compound, is the potassium salt of the metal complex compound. This salt is composed of lemon yellow crystals. Potassium is obtained from ferrocyanide, hydrogen cyanide, ferrochloride and calcium hydroxide. Potassium ferrocyanide is used in various industries. It is widely used, for example, as an anti-caking agent in road salt or table salt. Potassium ferrocyanide is also used in wine and citric acid production. It is also used to make fertilizer for plants.

It is not toxic in the human body and does not turn into cyanide in the body. Consumption of high amounts caused kidney damage in mice. However, no such effect was observed in dogs and humans. Only in people with kidney disease is delayed excretion from the body. No cancer-causing effect was observed in any research.

Potassium ferrocyanide or potassium ferrocyanide is one of the food additives described in the annex of the Turkish Food Codex Regulation on Food Additives published by the Ministry of Food, Agriculture and Livestock with the code E536.

Potassium ferrocyanide is synthetically obtained as a result of the reaction of hydrogen ferrocyanide and potassium hydroxide and is used as an anti-caking agent in refined salts.

However, the US Food and Drug Administration (FDA), potassium ferrocyanide, is considered a very toxic substance and is prohibited for use in the food industry. The Ministry of Food, Agriculture and Livestock has also stated that potassium ferrocyanide is used as an anti-caking additive in European countries and that this substance will not cause any harm to humans provided that certain limits are observed.

The authorized laboratories carry out analyzes of potassium hexacyanoferrate (II), potassium ferrocyanide or potassium ferrocyanide in refined salts within the scope of chemical food analyzes.
