The amount of non-saponifying substances in oil is expressed as the proportion of non-saponifying substances in oil. The amount of unsaponifiable substance in oil is the sum of substances which are dissolved in oil and are insoluble in water after saponification, but soluble in petroleum or diethyl ether used in the analysis process. Many items are included in this sum. That is, various aliphatic alcohols that are not saponified with caustic alkali, hydrocarbons, xanthophylls, carotenoids, sterols, lipid-like compounds, fat-soluble vitamins, and fat-soluble organic compounds are all non-fat saponifiable substances.

During the analysis, the oil is saponified with a base solution prepared in alcohol, the soap is extracted several times with solvent and the washed extract is evaporated to dryness.

In the determination of the non-saponification substance, the assessment is carried out as follows to determine the type of non-saponified part:

  • If the residue remains dissolved during boiling and after cooling, it contains fatty alcohols such as acetyl alcohol.
  • If the substance dissolves during boiling and crystallizes after cooling, it contains cholestrin, provitamins, vitamins D and E.
  • If the substance is insoluble during boiling, floats as an oily layer or solidifies upon cooling, it means paraffin, casein, mineral oils as well as substances mentioned in the above two cases.

If the non-saponified part is too much, it means that mineral oils are mixed with the oil.

The annex of the Turkish Food Codex Communiqué on Plant Oils (Communiqué no: 2012 / 2012) issued by the Ministry of Food, Agriculture and Livestock in 29, entitled Physical and Chemical Properties of Vegetable Oils (Annex 3) contains It is located.   • Less than 15 percent in sunflower oil
  • Less than 28 percent in corn oil
  • Less than 15 percent in cotton oil
  • Less than 15 percent in soybean oil
  • Less than 20 percent in sesame oil
  • Less than 7 percent in hazelnut oil

The amount of non-saponified material in butter is between 0,5 and 2,0.

In the authorized laboratories, the amount of non-saponified substance is determined within the scope of chemical tests. In these studies, the standards published in our country and in foreign countries are complied with.
