In chemical processes, polar bond is a type of bond in which different atoms come together. The strength of the bond depends entirely on the large difference in electron number. A polar covalent bond is a chemical bond formed by the use of electrons between two different nonmetallic atoms (such as water, ammonia), while an apolar covalent bond is a chemical bond formed by the use of electrons between two nonmetallic atoms (such as nitrogen, oxygen, bromine, fluorine). . Compounds containing polar covalent bonds are molecules that can ionize when dissolved or dissolved.

Communiqué No: 2007 / 2007 issued by the Ministry of Agriculture and Rural Affairs in the 41 Communiqué on Control Criteria of Fats and Oils Used for Frying. This Communiqué describes the physical and chemical criteria to be taken into account for the official control and inspection activities of fats and oils used for frying processes in food production, sales and mass consumption places.

According to the criteria of the control criteria of fats and oils mentioned in the communiqué, the said enterprises should make daily measurements of all the oils used in the production area and take them under control.

The limit values ​​in the annex of the Communiqué are as follows (Annex 1):

  • The amount of polar material must be less than or equal to 25.
  • The smoked point must be above 170.

If it is found out that the daily polar substances in the plants do not comply with the limit values, they must be sent to the waste oil collection point for recycling.

All decomposition products in the food industry have polar character. The total polar material content of the frying oils provides information on the amount of degradation reactions that occur. Therefore, the total polar material content is a limiting value for the withdrawal of frying oils from use.

In laboratories, determination of polar substances in frying oils is carried out. In these analysis studies, methods of analysis accepted in our country and foreign countries are followed.
