In 2009, the Turkish Food Codex Communiqué on Fermented Dairy Products (Communiqué no: 2009 / 25) was published by the Ministry of Food, Agriculture and Rural Affairs. This Communiqué has been prepared in order to ensure that fermented dairy products are produced, prepared, processed, packaged, stored, transported and stored in hygienic conditions by appropriate techniques. This Communiqué covers all fermented dairy products, heat treated fermented dairy products, concentrated fermented dairy products and composite dairy products based on these products.

Natamycin is obtained from a microorganism. Naturally occurring natamycin inhibits yeast and mold growth. It shows a strong activity even at low concentrations and has a wide usage area. The active ingredient natamycin and lactose standardized additives are used to prevent the development of yeast and mold which are harmful to human health in food products. In accordance with the provisions of the aforementioned communiqué, the use of natamycin as an external surface preservative in cheeses and sausages is permitted. Natamycin, a natural preservative, does not pose a danger to human health and is fully compatible with human metabolism. It has advantages that cannot be compared with similar synthetic preservatives such as sodium benzoate or potassium sorbate.

Natamycin, defined by the E325 code, is used in cheese, sausage, bread and bakery foods, milk and oil based desserts, sauces and snacks, mayonnaise and salad dressings. In some countries, natamycin is also used in food products such as fruit juices, wine and yogurt. Natamycin is a natural preservative and insoluble in water. Therefore, it is preferred as a preservative especially at the external levels of cheeses.

In authorized laboratories, natamycin analyzes are performed on milk and dairy products within the scope of chemical tests by using High Performance Liquid Chromatography (HPLC) device. With this method, very accurate results are obtained. In these analyzes, standards published by domestic and foreign organizations are also complied with.
