The variety of products in the food sector is increasing and the durability, reliability and variety of the products as well as the packaging and the way they are presented to consumers are important. This situation creates a serious competitive environment for the producers and ensures the development of the food sector. In line with these developments, food control has become one of the areas where food production has developed.

In this context, the amount of total powdered tea according to the Turkish Food Codex and the amount of stalk, litter and unoxidized parts in tea should be determined and the amount of these substances in black tea are important points.

Turkish Food Codex Tea Communiqué (Communiqué no: 2015 / 2015) was published by the Ministry of Food, Agriculture and Livestock in 30. This Communiqué was issued with the aim of determining the properties required to ensure that various teas are produced, prepared, processed, stored, stored, transported and placed on the market by appropriate techniques and under hygienic conditions. Said notification includes black tea, green tea, black and green tea with added flavors and decaffeinated black teas.

In the table attached to the Communiqué, total amount of powdered tea, amount of non-oxidized particles, total ash amount in dry matter, water extract in dry matter, raw cellulose amount in dry matter, black tea, black tea filtering bag, green tea and green tea filtering bag basis, the amount of alkalinity (in KOH) in water soluble ash in dry matter, the amount of ash insoluble in hydrochloric acid, the amount of caffeine in dry matter, the amount of water soluble ash (relative to total ash) and the moisture content.

Accordingly, the total amount of powder tea, black tea and green tea, the maximum percentage of 14, black tea filter bag and green tea filter bag must be at most 35 percent.

The total amount of powdered tea is determined in the authorized laboratories and these studies are based on the standards published by domestic and foreign organizations.
